Rhubarb is considered a fruit because it is usually used indessert, but it is actually a vegetable. Thought to be a native of Tibet, rhubarb is the leaf stalk of a perennial plant. Stay away from those leaves though, they are not to be eaten as they are poisonous. Whether you're baking, braising or stewing always remove the leaves before cooking. Rhubarb can be stewed with a little sugar and eaten as a dessert as well as being used in muffins, cakes, jams, flans or crumbles. A good source of vitamin C, dietary fibre, calcium, and potassium.
