Are you struggling to roll your own sushi? Some good news - you don’t need a sushi mat to make these delightful little sushi cakes! You can use ramekins, or be creative with muffin tins, cake tins or any other containers to make different shapes.

Ingredients
Sushi cake
- 400 g cooked rice (medium or short grain)
- 2 ½ Tbsp sushi vinegar
- 2 Tbsp sushi ginger
- 80 g cold smoked salmon slices
- 1 Tbsp black sesame seeds
To garnish
- Salmon roe or capsicum
Method
- Line 4 small ramekins (7.5cm diameter) with cling-film, being sure to cover the sides.
- Place 2 pieces of smoked salmon inside each ramekin and set aside.
- Mix cooked rice with sushi vinegar, sushi ginger and black sesame seeds.
- Put the rice on top of the smoked salmon in the ramekin. Press gently and cover with cling-film to stop rice from drying out. Set aside for 5 mins.
- To serve: turn the ramekin upside down to remove the sushi cake. Remove the cling-film and garnish with salmon roe or capsicum.
