Lime & sriracha chicken skewers

Zesty, spicy, chicken skewers piled on top of fluffy, fragrant jasmine rice – are you drooling yet? These chargrilled chicken thigh skewers can be cooked on a skillet or the BBQ, and are a delicious dinner for family, or a fabulous meal to share with friends. They also make an excellent finger food for parties – just cut smaller pieces, thread onto mini skewers, and serve with a variety of dipping sauces.
Ingredients
- Zest of 1 lime
- ¼ cup lime juice
- ¼ cup sriracha sauce
- 1 Tbsp olive oil
- 800 g chicken thigh fillets, skin removed
- ¾ cup mayonnaise
- Fresh coriander to garnish
- Fresh lime wedges to serve
Replace Sriracha sauce with peri peri sauce, sweet chilli sauce or Sambal Oelek, and chicken with pork fillet.
Method
- Place lime zest and juice, sriracha sauce and oil in a large bowl. Reserve 2 Tbsp of the marinade and mix into the mayonnaise for serving. Set aside.
- Add the chicken to the marinade and toss to coat. Cover and refrigerate for 15 minutes to marinate.
- Thread chicken onto skewers.
- Preheat a char- grill pan over medium heat or use a BBQ. Brush chicken with a little olive oil and cook in batches for 4-5 minutes each side, until charred and cooked through.
- Serve skewers garnished with fresh coriander leaves.
- Serve with the flavoured mayonnaise and lime wedges and extra sriracha sauce if wished.
Accompany with jasmine rice and a crisp green salad.
If using wooden skewers, soak them in cold water for 30 minutes before threading the chicken. This helps stops the skewers from burning if using the BBQ for cooking.
Cut chicken pieces smaller and thread onto short skewers for finger food and serve with the mayo, Sriracha sauce or sweet chilli sauce as a dipping sauce.
