Falafel

Ingredients
- 200 g soaked chickpeas
- 1 small onion
- 2 cloves garlic
- 1 bunch parsley
- 1 bunch coriander
- 3 tsp bi-carb soda
- Juice of one lemon
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tsp salt
- 1 tsp ground coriander
- Dash of cold water
- Oil for frying
Method
- Add your soaked chickpeas, onion and garlic to a food processor and blitz until coarse (sand consistency).
- Add the parsley, coriander, spices, bi-carb soda and lemon juice and blitz again until it forms a loose dough.
- At this point add a small dash of cold water. Try to add as little as possible because if you add too much the dough will become too wet.
- Heat some vegetable or canola oil to 160°C. Roll your falafel dough into balls and cook for 4-5 minutes or until a nice golden crust is formed on the outside. Remove and place on some paper to dry.
- Serve with hummus or in a pita with veg and yogurt.
