Eggplant, halloumi & tomato burgers

You won’t miss the meat with these top-tier vegetarian burgers. The delicious tang of golden halloumi combines with the earthy eggplant for a family flavour sensation. Who needs takeaways when you can whip these up in less than 30 minutes?
Ingredients
- 4 burger buns
- Olive oil
- 1 eggplant, trimmed and thinly sliced
- 250 g halloumi, sliced
- ½ cup Hummus
- 2 tomatoes, sliced
- 1 red onion, thinly sliced
- Handful baby spinach leaves
Replace burger buns with brioche or ciabatta buns or pita pockets.
Method
- Preheat your oven grill.
- Cut the burger buns in half, brush with olive oil and place on a tray. Toast until golden. Set aside.
- Heat a frying pan over high heat. Drizzle the eggplant with olive oil and fry for 4-5 minutes on each side until cooked through and set aside.
- Place the halloumi in the frying pan for 1-2 minute on each side, or until golden and hot.
- Spread 4 bun halves with hummus. Top with tomato slices, eggplant, halloumi, red onion and spinach, then place the bun ‘lid’ on top.
Toss the halloumi in flour to coat, shaking off any excess, and cook in batches for crispier result.
