Classic margherita pizza

When you need dinner in a flash, throw together this cheats margherita pizza for a quick and easy weeknight meal. The combination of basil and mozzarella is a classic, but of course you can customise your creation by adding any of your other favourite pizza toppings. A drizzle of olive oil before serving tops off this tasty treat – buon appetito!

Ingredients

  • 2 pre-made pizza bases
  • ½ - 1 cup tomato passata or pizza sauce
  • 1½ - 2 cups grated mozzarella cheese
  • Handful fresh basil leaves
Substitutions

Use fresh mozzarella or a combination of fresh and grated mozzarella.

Method

  1. Preheat the oven (with pizza stone if using) to 220°C.
  2. Spread pizza bases with passata or pizza sauce.
  3. Scatter over grated mozzarella cheese and a few basil leaves, leaving a few to garnish and drizzle over a little olive oil.
  4. Place pizzas on pizza stones if using or on baking trays. Cook 8-10 minutes until the crust is golden and the cheese is bubbly. 
  5. Remove from the oven. Garnish with extra basil before serving.
Chef tips

Create your own pizza by adding toppings to the base margherita – ham, chorizo, sliced mushrooms, roasted and sliced capsicums or whatever takes your fancy.
