Chicken & lemongrass broth with udon noodles

Our sister Michaela loves making this Asian noodle soup when it is her turn to cook. Asian broths are so simple to make and are really easily adapted to how you like them, by adding or leaving out flavours as you wish.

Ingredients
Soup
- 2 L chicken stock
- ½ cup Shaoxing wine
- 5 cm piece of ginger, peeled and chopped
- 2 cloves garlic, bruised with the back of a knife
- Stalks from 1 bunch coriander, chopped
- 1 red chilli, deseeded and chopped
- Juice of 1 lime
- 2 Tbsp fish sauce
- 2 kaffir lime leaves (optional)
- 2 stalks lemongrass, bruised with the back of a knife
Chicken
- 4 boneless chicken thighs, skin on
- 2 Tbsp ground coriander
- Salt and pepper
- 1 Tbsp vegetable oil
To serve
- 4 bok choy, quartered and cleaned
- 400 g cooked udon noodles
- Lime juice, to taste
- Fish sauce, to taste
- Mung bean sprouts
- Spring onions, thinly sliced
- Chilli, thinly sliced
- Coriander leaves
Method
For the soup
- Place all soup ingredients in a large pot and slowly bring to the boil.
- Boil for 10 minutes, then reduce heat to a simmer. Simmer for 20 minutes while you cook the chicken.
For the chicken
- Pat the chicken dry with paper towels. Coat with the coriander then season.
- Heat the oil in a large fry pan over a medium heat.
- Place the chicken, skin side down, in the pan and cook for 6–7 minutes or until the skin starts to go crispy.
- Turn and cook the other side for 6–7 minutes. Check the chicken is cooked all the way through and leave to rest.
To serve
- Add bok choy and udon noodles to the soup and cook for a further 5 minutes. Season with lime juice and fish sauce if needed.
- Serve in small bowls with the chicken on top, garnished with mung bean sprouts, spring onions, chilli and coriander.
