Ingredients
- 2 chorizo sausages (optional)
- 250 g elbow macaroni pasta
- 1 small cauliflower, cut into small florets
- 1 cup milk
- 300 mL cream
- 200 g cheddar cheese, grated
- 150 g parmesan, grated
- 2 cups, sourdough breadcrumbs
- 2 Tbsp rosemary, finely chopped
- 1 clove garlic, crushed
- 50 g butter, melted
Substitutions
Replace chorizo with bacon or pancetta and breadcrumbs with panko crumbs.
Method
- Preheat oven to 200°C.
- Remove casting and torn chorizo sausages into bits (if using ) and fry in a small pan until cooked. Remove from pan.
- Cook pasta in a large saucepan in lightly salted water for 6 minutes.
- Add cauliflower and cook for a further 4 minutes. Drain well.
- Return the pasta and cauliflower to the saucepan. Pour in milk and cream and add the grated cheddar and parmesan. Season with salt and pepper. Stir over a low heat until cheese melts. Remove from the heat and stir through chorizo. Spoon into an ovenproof dish.
- Mix together breadcrumbs, rosemary, garlic and melted butter. Sprinkle over the macaroni mixture.
- Bake for 20-25 minutes until golden and piping hot.
Chef tips
Serve with a crisp green salad or your favourite green, steamed veggies.
